ปิโตรเลียม (Petroleum) เป็นสารประกอบสถานะต่างๆ ที่มีไฮโดรคาร์บอนเป็นตัวประกอบหลัก ได้แก่ น้ำมันดิบ ก๊าซธรรมชาติ และก๊าซธรรมชาติเหลว (Condensate) นอกจากนี้ก็มีสารอินทรีย์ที่มีกำมะถัน ออกซิเจนและไนโตรเจนเป็นองค์ประกอบอีกหลายชนิด ทั้งนี้ น้ำมันดิบจะมีคุณลักษณะและคุณสมบัติแตกต่างกันไปตามสัดส่วนของไฮโดรคาร์บอนประเภทต่างๆ ที่มีอยู่ ซึ่งจะผิดแผกไปตามที่มา ซึ่งถือเป็นเรื่องสำคัญในการกำหนดคุณค่าของน้ำมัน การกำหนดวิธีการและกระบวนการผลิตที่เหมาะสมในการกลั่นน้ำมันต่อไป
